M. ‘Butterflies’ Katz is a dedicated long-term vegan, activist & educator. She stopped eating animals at age 12 and, upon reading a vegan magazine from The American Vegan Society, became vegan at age 21. She lived with the Gentle World vegan community for 35 years where she taught veganic gardening, vegan cooking, feeding dogs vegan, and all aspects of vegan living to the many people who came through the centers.
She organized The South Florida VeganFest, which was free to the public with lines out the door. She was a head chef at a vegan restaurant on Maui, called The Vegan. She co-authored a vegan recipe book: Incredibly Delicious: Recipes for a New Paradigm.
